Recipe: Salmon and Rice with Ponzu

On our Sept. 6th Community Health Heroes Show, which focused on senior health in recognition of World Alzheimer's Month, Gia DiLeo of Green to Go prepared a yummy, cost-effective dish for our Eat Fit Nola Cooking Segment. Designed to help seniors and everyone stay on top of their physical and mental game, this delicious, one-pot, low-calorie recipe is sure to please.
Enjoy!

Ingredients:
Purple rice (1 cup)
Salmon Filet (1 filet)
Broccoli (1/2 cup)
Sweet onions (1/4 cup)
Ponzu:
Lemon juice (2/3 cup)
Lime juice (1/3 cup)
Soy sauce - low sodium (1 cup)
Mirin (1/4 cup)
Cayenne (pinch)
Mix all ingredients for ponzu. Grill onions and broccoli with a touch of salt. Bake salmon with a hint of oil.
Dish and serve!
