Recipe: Grilled Asian Tuna Salad
During the Eat Fit NOLA Cooking Segment on our October 4th Community Health Heroes Show, we focused on helping people make smarter snack choices when cheering on their favorite team, whether in the Dome or at home.
Joining us in the kitchen was Chef Lenny Martinsen, regional executive chef for Centerplate. In addition to preparing our featured recipe, Chef Lenny also showed us a variety of healthy concession options available at the Louisiana Superdome and the Smoothie King Center, such as Shrimp and Grits (made with cauliflower grits); hearty, lo-cal Buffalo Chicken wraps; and colorful salads. Chilled Asian Tuna Salad
Tuna Steak 4 oz
Sesame Seeds to coat
Veg oil 2 tbs
Shredded Cabbage 4 oz
Seaweed Salad 2 oz
Bamboo Shoots 1 oz
Water Chestnuts 1 oz
Toasted almonds & coconuts ½ oz
Asian Dressing 2 oz
Preparation
1. Coat tuna with sesame seeds
2. Add oil to sauté pan, llight smoke add tuna
and sear all sides, set aside allow to cool
3. Prepare salad, mix cabbage, seaweed
salad, bamboo shoots, water
chestnuts, place in serving bowl
4. Slice tuna and place on top, garnish with
almonds & coconuts
5. Portion salad dressing on the side and serve
