An Eat Fit Nola Chicken Salad Recipe You'll Love

Can you fall in love with Chicken Salad? We fall in love with lots of persons, places and things, so why not a delicious chicken salad?

We were fortunate to have Marc Robért of Robért Fresh Market, now an Eat Fit grocery, on our April show. During our Eat Fit Nola Cooking Segment, Marc told us how customers can make healthy choices while they’re making groceries, as he prepared one of the community's favorites--Robért Fresh Market Chicken Salad. He also made a scrumptious Cedar Plank Smoked Salmon, but it was the Chicken Salad that my eyes and watering mouth kept drifting towards, so I thought I'd share this simple, delicious and healthy recipe with all of you. Enjoy!

Robért Fresh Market Chicken Salad

Description: An Accent Item and customer favorite for years.

Ingredients:

6 boneless skinless chicken breasts

3/4 cups of honey

2 cups of mayo

1/2 cup of diced celery

1/2 cup of diced onions

1/2 table spoon white pepper

1/2 table spoon granulated garlic

Preparation:

  1. Preheat oven to 350 degrees

  2. Clean chicken in water and place chicken into pan with 4 cups of water. Season water with salt and pepper.

  3. Cover pan with aluminum foil

  4. Place into oven for 1 hour.

  5. Drain all broth and drippings from chicken and allow to cool.

  6. Pull chicken into shreds by hand and place in a bowl.

  7. Add remaining ingredients and mix thoroughly

  8. Recipe has a four day shelf life in a covered container
